CUCUMBER & PEANUT SALAD (Kamang Kakdi)

Preparation time: 10-15 minutes
 
Ingredients:
2 tablespoons desiccated coconut (nariyal)
55g roasted peanuts (bhune hue mungfali)
350g cucumber, finely chopped (bareek kate kheera)
1 ½ tablespoons lime juice (nimbu ka ras)
1 tablespoon finely chopped fresh coriander leaves (bareek kate dhaniye ke patte)
1 green chilli, seeded & finely chopped (beej nikalkar bareek kate hari mirch)
½ teaspoon salt to taste (namak swaad anusaar)
½ teaspoon sugar (chini)
 
Method:
o Grind the coconut in a spice or coffee mill to a smooth powder. Coarsely crush the peanuts.
o Mix all the ingredients together and serve.
