Recipe: Poha

Poha

Poha is nothing but flattened rice. These flat flakes puff up when soaked in any liquids like Water or Milk. This flattened Rice can be used to make any sweet dish or a tea time snack. This lightly seasoned variety is a quick and convenient breakfast item!

Serves: 2

Preparation Time: 10-minutes.

Cooking Time: 15-minutes

Ingredients:

Beaten Rice (Pawa/Powa/Poha) - 2 cups

Potatoes chopped - 1

Onions finely chopped - 1

Green Chillies finely chopped - 2

Oil - 4 tbsp

Mustard Seeds - ½ tsp

Bengal Gram (Chana Dal)- 1 tsp

Black Gram (Urid Dal) - 1 tsp

Turmeric Powder - ½ tsp

Asafoetida - ¼ tsp

Curry leaves - 5 or 6

Peanuts - 2 tsp

Salt to taste

½ of a lime juice

Chopped Cilantro (Coriander Leaves) for garnishing

Method:

• Soak the beaten Rice in Water till it becomes soft but not mushy, say about 5-7 min. Wash and drain all the Water.

• Add some Salt and Turmeric powder and keep this aside.

• Heat Oil in a pan, add Mustard Seeds and wait for it to sputter. Next add Black Gram, Asafoetida, Curry Leaves, Green Chillies and Peanuts and fry until they crackle.

• Then add Potatoes, Sauté for few minutes. Then add Onions and fry till they are cooked.

• Then add Poha and Cilantro and stir. Keep this on low flame for 5 minutes.

• Let it cool for some time and then add Lime

Juice and serve.

Chilli Paneer

Chilli Paneer is a spicy dish served as a starter. Paneer being plain tastes delicious with this hot Capsicum flavoured sauce. This can be eaten as it is or even with Fried Rice or Veg Noodles.

Ingredients:

Paneer/Cottage Cheese - 200 gms

Cornflour - 4 Tbsp

Oil - 2 Tbsp + for deep frying

Ginger - Garlic paste - 1 tsp

Green Chillies chopped - 3

Onions chopped - about 1 Cup

Red and Green Peppers chopped - 1 Cup

Pepper powder - ½ tsp

Soya Sauce - 2 Tbsp

Chilli Sauce - 1 Tbsp

Ajinomoto - ¼ tsp

Salt to taste

Vegetable Stock - ½ Cup

Water

Spring Onions for garnishing

Coriander Leaves/ Cilantro chopped for garnishing

Method:

• Firstly thaw and cut the Paneer in the desired shape.

• Roll this Paneer in Cornflour and deep fry them in hot Oil.

• Fry them till only the edges start to turn brown in colour. Then take them out of Oil and set aside on a paper towel.

• Mix the remaining Cornflour in some Water and keep it aside.

• Heat Oil in a pan, add Garlic and fry for a minute.

• Then add Green Chillies, Onions, Peppers and saute for few more minutes.

• Then add fried Paneer and the Stock. Mix well.

• Lateron add the Pepper powder, Soya Sauce, Chilli Sauce, Ajinomoto and Salt. Mix well.

• Lastly add the Cornflour paste and mix on high heat. Cook until all the Paneer is coated well.

• Garnish with some Spring Onions and Coriander Leaves / Cilantro and serve hot!
